1 qt milk
1 c yellow cornmeal or farina
2 tsp salt
1/4 tsp pepper
2 eggs, well beaten
1 small onion, minced
1 1/2 c grated Parmesan cheese
1/4 c melted butter

Directions:
Directions:
Combine cold milk and cornmeal. Cook stirring, until mixture bubbles and becomes very thick. Stir in salt, pepper, eggs, and onion. Beat in 1 cup of cheese. Spread mixture in a shallow 1 1/2 qt oblong pyrex casserole. Mixture will be about 1 1/2 inches thick. Chill. Unmolded and cut with a sharp knife or cookie cutter into desired shapes - fingers, squares, or crescents. Place pieces in a single layer in buttered casserole. Brush with melted butter and sprinkle with remaining grated parmesan cheese. Bake in a preheated moderate oven (350º) for 20 minutes or until lightly browned and hot.
