2 c. all-purpose flour
1 c. oil
1 tsp. salt
1 tsp. baking soda
3 c. Granny Smith apples, diced
2 c. sugar
3 eggs
1 tsp. baking powder
1 tsp. vanilla
1 c. chopped pecans, opt.

Preheat oven to 350.

Combine flour, sugar, salt, baking powder, baking soda, eggs, vanilla & oil; mix well. Stir in chopped apples & pecans.

Place in greased & floured tube cake pan.

Bake for 55 min -1 hour.
