"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Cindy Hoots

3 # ground chuck
2-3 cans petite diced tomatoes
2 pkgs. chili mix
1-2 cans chili beans, undrained
1 lg. onion, chopped
1 can Rotel tomatoes
8 oz. can tomato paste

Ranch Style beans instead of chili beans.
16 oz. taco sauce or salsa & 1 tsp. chili powder instead of packaged chili mix.
Add a can of Mexican Style tomatoes for one of the cans of regular diced tomatoes...or both.

Brown meat & onion; drain. Return to pot an add remaining ingredients.

Cook on low heat for about 45 minutes.

Serve with shredded cheddar cheese on top. Great with corn chips or crackers!
