Gluten Free Chicken & Dumplings Recipe

4-5 chicken breasts
2 Tbsp. Earth Balance buttery spread
1 carton chicken broth
1-2 cans G cream of chicken soup
2 chicken bouillon cubes
Salt & Pepper, to taste

2 c. GF Bisquick Mix
3 eggs
c. almond milk
⅓ c. coconut oil (solid form)

Boil chicken with bouillon. Remove from broth and shred with an electric mixer. Set aside.

Add broth, soup & seasonings. Bring to a boil

Mix dumpling ingredients together. Drop by rounded tsp. into the boiling broth. Stir gently to separate them.

Return to a boil; lower heat & simmer until dumplings are done.

Return chicken to pot. Simmer 10-15 minutes longer. (If they are too thick, either add extra broth or water, as neede.)
