2 chicken breasts
½ c. pizza blend shredded cheese
½ c. Italian shredded cheese (or Parmesean)
1 egg
3 tsp. Italian seasoning divided
2-3 tsp. minced garlic
½ tsp. salt
2 c. shredded mozzarella, divided
1 c. marinara sauce (tomato sauce with basil, garlic & oregano)
Additional salt & pepper, to taste

Butterfly chicken breasts and place into a lightly greased baking dish.

In a small mixing bowl, stir together pizza & Italian cheeses, egg, 2 tsp. Italian seasoning, garli, salt & 1 . mozzarella cheese.

Spoon about ¼ cup of sauce onto one half of each chicken breast. Spread cheese mixture on top of the sauce and fold chicken breasts over to close.

Drizzle remaining marinara sauce over chicken. Top with remaining mozzarella cheese. Sprinkle with remaining Italian seasoning and salt & pepper. Optional: Sprinkle some grated Parmesean cheese over top.

Bake in a 400º oven for 25-30 minutes or until chicken is done.
