2 eggs
1 cup sugar
2/3 cup oil
1 cup pareve milk
3 teaspoons baking powder
1 teaspoon baking soda
3 cups flour
2 teaspoons coffee dissolved in 1/2 cup boiling water
1 cup Baker's Choice cappuccino chips

Crumble:
1 1/4 cups flour
1 stick margarine
3/4 cup sugar
1/4 cup brown sugar
1 teaspoon ground cinnamon
3/4- 1 cup Baker's Choice cappuccino chips

Directions:
Directions:
Preheat oven to 350
Beat eggs, add in the sugar. Add in oil, pareve milk, dry ingredients and coffee, beating well after each addition. Stir in the cappuccino chips by hand.
Make the crumble in a bowl- combine all the ingredients then add in the cappuccino chips.
Fill muffin liners with batter (3/4 full) and top with crumble. Bake for 30 minutes. Makes 30 muffins
