1 1/2 cups flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup oil
1 egg
1/3 cup milk or soy dream
1 cup fresh blueberries

Crumb Topping:
1/2 cup sugar
1/3 cup flour
1/4 cup butter or margarine
1 1/2 teaspoons ground cinnamon

Directions:
Directions:
Preheat oven to 400, grease muffin tins or liners
Combine flour, sugar, salt and baking powder. Place oil into a 1 cup measuring cup; add the egg and enough milk to fill the rest of the measuring cup to the 1 cup line. Mix this into the flour mixture. Fold in the blueberries and fill muffin tins 3/4 full. Combine crumb topping by hand in a bowl and sprinkle on top of muffins
Bake for 20-25 minutes, don't overbake
