Ingredients: ¾ cup finely chopped onion 1½ cups chopped celery (with leaves) 1 cup butter 9 cups soft bread cubes (about 1 loaf of bread dried and cut into cubes. See below) 2 tsp. salt (or 1 tsp. if turkey is brined) 1½ tsp. dried sage leaves (or 2-3 tsp. fresh) 1 tsp. dried thyme leaves (or 2-3 tsp. fresh) ½ tsp. pepper

Directions:Allow ¾ cup stuffing for each pound of turkey. This recipe makes enough for a 12-pound turkey (about 9 cups of stuffing).
Lay bread slices out on a rack or cookie sheet the evening before you make the turkey. Turn the slices over before you go to bed. In the morning, cut the bread into cubes. (Optional) Cut off the bread crusts. Set aside in a large bowl.
In a large skillet, cook and stir the onion and celery in the butter until the onion is tender. Stir in about ⅓ of the bread cubes. Add the celery, onion, and bread mixture back to the bowl with the rest of the bread cubes. Add remaining ingredients and toss. Stuff the turkey just before roasting. |

Notes: If you have kitties or doggies, cover the bread slices with a dishcloth. There have been countless times that I have forgotten to do this only to wake up and find half-eaten bread slices all over the table and floor!
