Irene - GG

1 T oil
1 tsp finely chopped garlic
c chicken stock
4 T sugar
4 T red wine vinegar
1 tsp soy sauce
1 T cornstarch dissolved in 2 T cold water

For a large amount of sauce (x8):
4 c chicken stock
2 c sugar
2 c vinegar
8 tsp soy sauce
1/2 c corn starch
1 c water

Heat pan over high heat. Add oil. When hot add garlic and cook (don't burn). Garlic will cook very fast so don't let it brown. Mix in chicken stock, sugar soy sauce and vinegar into the garlic. Bring to a boil for 1 minute or until sugar has dissolved. Mix the cornstarch and add to pan. Stir constantly until sauce becomes thick and clear - then it's done.
