3-3 ½ lbs. potatoes (#10 medium)
6 hard-boiled eggs
1 medium onion, finely chopped
½ C. mayonnaise
½ C. evaporated milk
3 T. balsamic vinegar
2 T. Dijon mustard
¼ C. sugar
1 tsp. salt
½ tsp. pepper

Directions:
Cook potatoes in boiling, salted water (can be peeled & cubed before boiling). Drain potatoes & cool. Cook eggs; remove yokes. Chop whites & onions; add to potatoes. Mash yokes; combine with mayo, milk, vinegar, mustard, sugar, salt & pepper. Pour over potatoes & toss. Chill
