Margarita Chicken Fajitas Recipe

2 chicken breast
1/4 cup olive oil
2 tablespoons vegetable oil
Grated zest of 1 lime
1 lime worth of juice
1 miniature of tequila
3 tablespoons of adobo sauce (3 tablespoons of hot sauce)
2 tablespoons orange juice
3 cloves of minced garlic
1 teaspoon sugar
2 teaspoons of salt
1 teaspoon of pepper

1 tablespoon vegetable oil
1 large red onion, sliced
1 tablespoon chopped garlic
3 cups sliced mushrooms
4 packed cups of spinach
1 can of Rotel tomatoes and chilies, drained (Garnish)
2 cups shredded pepper jack or Mexican cheese

8 medium flour tortillas

Directions:
Directions:
1) in a bowl or ziplock bag marinate chicken in olive oil, lime juice, lime zest, tequila, adobo/ hot sauce, orange juice, garlic, sugar, salt, and pepper. Let it marinate anywhere between 4-24 hours
2) Preheat oven to 200º
3) take chicken out of marinade and transfer to greased pan. Don’t get rid of one cup of the marinade 4) Cook chicken until brown on both sides. Cut into chicken, if still pink cook for several more minutes, and once cooked transfer to oven to keep warm. Don’t clean the skillet yet
4) In same skillet heat oil over medium high heat
5) Add red onions, and cook until browned, roughly 10-12 minutes
6) Add garlic and cook for 1 minute before adding mushrooms
7) Cook mushrooms for 6-7 minutes, or until they release their liquids. Roughly 6-7 minutes
8) Add spinach and cook until wilted. Roughly 1-2 minutes
9) Season to taste with salt and pepper and remove from skillet
10) Add the cup of marinade to empty skillet and bring to boil
11) Take chicken out of the oven and shred into bite sized pieces
12) Warm tortillas
13) Drizzle the boiled marinade over the bite sized chicken, this will help keep the chicken moist
14) Along with the chicken and veggie mixture set out cheese, and Rotels, along with any other toppings you may want
15) Have fun building your dream Fajitas!

These are delicious as just the filling! If you don’t want spicy though you can just use a basic tomato mixture, or a non spicy salsa.
