4 to 5 lb center cut pork loin roast
1 large orange, sliced
1/4 c brown sugar
2 tbs flour
2 tbs vinegar

Directions:
Directions:
Place roast, fat side up, on a rack in an open roasting pan. Roast in slow oven (325º) until meat thermometer registers 170º allowing 35 to 40 min per pound. Remove from oven. Cut orange slices in half. Combine sugar, flour, and vinegar. Mix well. Make a cut through fat covering about 1 in into roast. Spread sugar mixture over meat. Insert half slices of orange, rind edge up, between slices of meat. Return roast to oven 10 to 15 minutes or until glaze is set.
