Turkey Herb Roasted Recipe

1 - 14 lb. turkey
1 tbsp. salt
1 tsp. pepper
18 sprigs fresh thyme, divided
4 medium onions, sliced
4 celery stick, sliced
2 medium carrots, sliced
3 bay leaves
1 tbsp. peppercorns
cup butter or margarine, melted
1 tsp. minced fresh sage or tsp. rubbed sage
1 tsp. minced fresh thyme
1 tsp. minced chives

Rub surface of turkey with salt and pepper and sprinkle cavity. Place 12 sprigs of thyme in cavity. In heavy roasting pan, place onions, celery, carrots, bay leaves, peppercorns and remaining thyme sprigs. Place turkey breast side up, over vegetables. Drizzle butter over turkey and sprinkle with minced herbs. Cover loosely with foil; bake 1 to 2 hours longer or until meat thermometer reads 180F basting every 20 minutes. Cover and let stand for 20 minutes before carving. Discard bay leaves and peppercorns.
