4 lbs. boneless turkey, thawed
8 - 10 cloves garlic
3 tbsps. rosemary
1 tsp. paprika
1 tbsp. coarsely ground black pepper
1 tsp. coarse Kosher style salt
2 tbsps. olive oil
rosemary sprigs (optional)

Directions:
Place turkey skin side down as flat as possible on cutting board. Combine garlic, rosemary, pepper, salt and oil in food processor; blend until coarsely chopped. Spread half the garlic mixture inside the turkey; reroll turkey. Tie firmly with string every 2" into log shape. Spread remaining garlic mixture over log; place on rack in roasting pan. Roast 350F for 2 hours or until center registers 170F. A long log shape takes less time than a more compact roast. Remove from oven; let stand 20 minutes before removing string. Cut thin slices to serve. Garnish with rosemary sprigs. Scrape cooking juices from bottom of pan and spoon over meat, or thicken with flour and add chicken broth for a gravy.
