2½ cups low fat milk
⅓ cup uncooked long grain white rice
¼ tsp. sugar
¼ tsp. salt
¼ tsp. cinnamon
⅓ cup raisins
1 tsp. vanilla

Directions:
Directions:
In a medium saucepan, bring milk to a boil. Stir in rice, sugar, salt and cinnamon, Return to boil, lower heat and simmer covered for 45 minutes or until most of the milk is absorbed and rice is creamy, stirring occasionally. Meanwhile, in a small bowl pour enough boiling water over raisins to cover. Let stand for 10 minutes or until raisins are plump. Drain well. Stir raisins and vanilla into rice. Cover and let stand on wire rack for 5 minutes. Serve warm or cold.
