2 containers (8 oz each) whipped cream cheese
1/2 cup plus 2 Tablespoons sugar
3 eggs
1 teaspoon vanilla extract
1 cup milk chocolate chips
18 stella d'oro fudge cookies
Cupcake holders
Directions:
Directions:
Preheat oven to 350
Using a dairy mixer, beat the cream cheese and sugar until combined.
Beat in the eggs and vanilla extract
Stir in the chocolate chips
Put a fudge cookie on the bottom of each cupcake holder- fudge side facing up
Fill the cupcake holder 2/3 full with cheese mixture
Bake about 35 minutes- until the center of each cheesecake is firm
Allow to cool and then refrigerate.
