1 chicken breast boneless skinless
2 oz cream cheese softened, I like to use the Jalapeño Cream Cheese
4-5 jalapeño peppers fresh
4 oz sharp cheddar cheese grated
Bacon strips
Olive Oil
Garlic powder
Directions:
Directions:
1) Preheat oven to 350º
2) Lay out bacon on cookie sheet, use enough to wrap breast
3) Butterfly the chicken breast, lightly drizzle with olive oil, and garlic powder on outside of breast and place on Bacon Blanket, unflavored side facing up. Make sure the right side of your butterfly is in the middle of the blanket
4) Spread Cream Cheese on right side of butterfly, then lay down your Jalapeño slices until cream cheese is covered, and sprinkle cheese over Jalapeños
5) bring the left side of butterfly over onto the right, covering the filling, and begin bringing Bacon ends over the breast to wrap the breast.
6) Bake for 20-25 minutes, and check. If still uncooked cook for 5 minutes
7) Once done, let cool slightly and enjoy
