1¼ cups all purpose flour
¼ cup sugar
½ cup unsalted butter


2 large eggs
1 cup light brown sugar, packed
½ cup crushed pineapple, drained
1 cup unsweetened coconut
1 tsp. vanilla
2 tbsp. all purpose flour
½ tsp. baking powder

Icing:
3 tbsp. unsalted butter, room temperature
1½ cups icing sugar, sifted
1½ tbsp. orange juice and pineapple juice
½ tsp. vanilla

Directions:
Directions:
For shortbread base, preheat oven to 350ºF and line 8" pan with parchment paper so it hangs over side of the pan. Combine flour, sugar and cut in butter until it's a crumbly texture. Press crumbs into prepared pan and bake for 15 minutes or until golden brown around the edges. Cool completely. For filling beat eggs by hand with brown sugar. Stir in pineapple, coconut, vanilla, flour and baking powder and spread over cooled base. Bake for about 25 minutes, until it's an even golden brown color. Cool. For icing beat all ingredients together until smooth and spread over cooled pineapple layer. Let set before slicing into bars.
