4 carrots, sliced
3 scallions, chopped
3 zucchini, sliced
3 yellow squash, sliced
3 bell pepper, diced
3 sticks celery, sliced
4 cups green cabbage, sliced
1 onion, chopped
1 leek, sliced
12 cups plus 3 tbsps. fat free broth
2 -28oz. cans whole tomatoes in juice, coarsely chopped
1 pkg. onion soup mix

Directions:
Directions:
In a large pot coated with cooking spray cook all vegetables together until crisp tender. Add 3 tbsp. broth to prevent sticking, if necessary. Add remaining broth, tomatoes and onion soup mix. Boil 10 minutes. Reduce heat and simmer until vegetables are soft. Add water to cover if necessary.
Day 1 - Eat soup and as much fruit as you want (except bananas)
Day 2 - Eat soup and any vegetables you want (except beans, peas and corn) and baked potato with butter
Day 3 - Eat soup, fruit (except bananas) and vegetables (except potatoes)
Day 4 - Eat soup, three bananas and unlimited fat free milk
Day 5 - Eat soup, up to 20oz. of broiled or baked beef and up to six tomatoes
Day 6 - Eat soup, unlimited broiled or baked beef, skinless chicken or fish and vegetables (except potatoes)
Day 7 - Eat soup, brown rice, unsweetened fruit juice and vegetables (except potatoes)
