1 tbsp. plus 1 tsp. olive oil
1 cup onions, finely chopped
⅓ cup celery, finely chopped
⅓ cup carrots, finely chopped
⅓ cup green bell pepper, finely chopped
½ tsp. dried oregano leaves
½ tsp. dried thyme leaves
15 oz. extra lean ground beef
1 cup canned tomatoes with juice
2 tbsps. tomato paste
1 tbsp. Worcestershire sauce
2 tbsps. red wine vinegar
¼ tsp. hot pepper sauce
salt and freshly ground pepper, to taste

Directions:
Heat oil, saute onions, celery, carrot and bell pepper, stirring occassionally until onions are translucent, about 10-12 minutes. Add oregano, thyme and beef, breaking up beef with a wooden spoon. Saute until beef is cooked, about 3-4 minutes. Combine tomatoes, water and tomato paste and add to beef mixture. Add worcestershire sauce, vinegar, red pepper sauce, salt and pepper and bring to a boil, lower heat and simmer 10 minutes, stirring occasionally. Serve on hamburger buns.
