3 cups cake and pastry flour
1 tbs baking powder
1/2 tsp baking soda
3/4 tsp salt
1/4 tsp nutmeg
3 eggs
3/4 cup lightly packed brown sugar
2 tsp vanilla
1 cup mashed bananas
1 cup whipping cream
3 oz pkg pecans finely chopped about 3/4 cup

Topping

1 cup lightly packed brown sugar
1/4 cup cake and pastry flour
1/2 tsp salt
1/2 cup melted butter
1/2 cup chopped pecans or coconut

Directions:
Directions:
Butter a 9 x 13 cake pan or 2 round/square pans. Preheat oven to 350º.

In a small bowl using a fork stir cake and pastry flour with baking powder, baking soda, salt and nutmeg.

In the large bowl of an electric mixer, beat eggs well at medium speed. Continuing to beat a medium speed, gradually add brown sugar, until mixture is thick and light about 2 minutes. Stir in vanilla and bananas.

In a small bowl, whip cream until it forms peaks when beaters are lifted. Turn mixer to lowest speed. Beat half of flour mixture into egg mixture, just until no streaks of flour remain. Then, beat in the rest. Fold this mixture into mixture in large bowl. Fold in pecans.

Pour into pans. Mix topping ingredients . Top cakes.

Bake in oven until cake tester comes out clean- about 35 min and then broil for 2 minutes watching carefully.

Serve with whipped cream or vanilla ice cream
