3 cups Chatelaine Cake Mix (see recipe)
2/3 cup granulated sugar2 eggs
1 cup milk
1 tsp vanilla

Preheat oven to 350º. Grease 2 square or round cake pans or a 9 x 13 pan. Place mix and sugar in bowl. Stir to mix. In another bowl, whisk eggs with milk and vanilla.

Using an electric mixer set at medium speed, gradually beat half of egg mixture into dry mixture. Continue beating at medium speed for 1 minute.

Scrape down sides of bowl with a spatula. Gradually beat in remaining egg mixture. Continue beating for 2 minutes, until batter is very smooth. Pour batter in pans and smooth tops. Lightly bang pans on counter to remove any air bubbles.

Bake until cakes come away from sides of pans and a cake tester comes out clean about 22 to 25 minutes.

Cool cakes in pans on a rack for 5 minutes before unmolding. Then completely cool cakes on rack before icing. At room temperature cakes will keep covered, for 3 days. Refrigerated they will keep a week. They may also be frozen.
