3 eggs
1 cup vegetable oil
2 cups sugar
3 teaspoons vanilla extract

3 cups flour
2 teaspoons baking soda
3 teaspoons cinnamon
1 teaspoon salt
¼ teaspoon baking powder

2 cups peeled and grated raw zucchini

1 cup raisins
1 cup walnuts

Directions:
Directions:
In a large bowl, cream together eggs, oil, sugar and vanilla. Add zucchini.

Sift together flour, baking soda, cinnamon, salt, and baking powder. Add nuts and raisins.

Slowly mix together all ingredients until blended well.

Pour into greased bread pans.

Bake 1 hour in 325ºF oven. (15 minutes more for larger loaves.)
