1 quart heavy cream
1 cup sugar
6 large egg yolks
2 quarts water
1 tsp vanilla

Preheat oven to 325 degrees F.
Combine cream and vanilla in a saucepan over medium heat to a boil. Remove from heat, cover and allow to sit 15 minutes.
In a bowl, whisk 1/2 cup sugar and egg yolks until well blended. Add cream a little at a time, stirring constantly. Pour liquid into 6 7-8oz ramekins. Place remekins in roasting pan and pour hot water halfway up the sides. Bake until set 40-45 minutes.
Refrigerate 2 hours to 3 days.
Remove 30 minutes before serving. Divide 1/2 cup sugar among the ramekins. Spread evenly and torch to melt sugar or put under broiler. Allow dessert to rest 5 minutes.
