For the Potatoes

C. Water
2 T. Salt
Russet Potatoes, scrubbed
1 T. Vegetable Oil

Directions:
Directions:
Combine water and salt in a wide bowl. Prick each potato with a fork 6 - 8 times and roll in the salted water until the entire potato is wet. Place the potatoes on the baking rack and bake until the internal temp. is 202. about 45 - 60 minutes. Brush each potato with the oil and return to the oven for 10 minutes. When done, remove from the oven and cut an X on the top immediately. Place a small pad of butter in each potato and a couple of spoonful's of the filling and enjoy!
 

For the Filling

Olive oil
Lemon Zest
Minced Shallot
Chopped Parsley
Salt and Pepper to taste

Combine all ingredients and chill until ready to fill the potatoes
