 Bread flour ½ cup
 Baking Soda 1 tsp
 Hot water ¼ cup
 Cold water ¼ cup
 Egg 1 large
 
 Broth:
 Chicken Broth 8 to 10 cup
 Miso paste 5 tbsp
 Optional/Toban Jang 5 tsp (or as you like)
 Ground sesame seeds 2 tbsp

      | Directions: | Directions:How to Make Noodles1. Mix ¼ cup hot water (170 F) and baking soda really well
 2. Add ¼ cold water and egg
 3. Combine all well – (A)
 4. Place all purpose flour and bread flour in the large bowl (mixer bowl)
 5. Add (A) to flour and mix until dough become one; big ball
 6. Wrap the dough/ball tightly in cling wrap and rest at least 30 minutes up to overnight
 7. Make Dough to noodle (suggestion/use Kitchen Aid pasta machine (level 4) to thin the dough and cut into noodle) **use corn starch on the noodle to avoid sticking together
 
 How to Make Ramen Broth
 1. Boil Chicken Broth
 2. Mix Miso paste, toban jang, and ground sesame seeds – (B)
 3. Combine 1tbsp (B) with 2 cups of chicken broth in a service bowl
 
 Cooking
 1. Boiling water about 10 to 12 cups
 2. Once boiled add all noodles for about 2 minutes
 3. Drain and rinse noodles with warm tap water, shake it off water
 4. Add rinsed noodle to your hot ramen broth
 5. Add any toppings you like
