Vegetable Soup Recipe

1/2 Large Vidalia onion - chopped
2 stalks celery - chopped
2 to 3 carrots - chopped
1 large potato
1 can green beans
1 cup frozen corn
1 cup canned peas
1 lg can petite diced tomatoes (28 oz)
1 small head cabbage

Meat - optional, can be canned beef, chuck roast, leftover pot roast

1 box beef broth or beef bone broth (more or less depending on how soupy, can add water)

Season to taste

Saute onions, celery & carrots in oil (dutch oven or big pot)
Add beef, tomatoes, broth, potatoes - let simmer for 20 to 30 minutes
Add green beans, peas, corn and stir
Cut up cabbage and add to top - push it down
Simmer until cabbage is done
