Christmas Crack Recipe

Aunt Rosemary


1 cup unsalted butter (kerrygold preferably) NO MARGARINE
1 cup brown sugar packed tightly (light)
2 cups semi sweet chocolate chips (mini can be easier)
40 saltine crackers (close to sleeve)

Preheat oven to 350
Line 15x10 or 12x17 cookie sheet (with sides) with foil & spray with non-stick spray
Lay flat layer of crackers on foil
Melt sugar & butter until a boil is reached
Reduce heat and simmer uncovered for 5-6 minutes or until mixture is thickened and sugar dissolved
Pour mixture over crackers and spread to coat evenly
Bake for 8-10 minutes or until toffee becomes bubbly
After removing pan from oven, let sit 3-5 minutes
Sprinkle on chocolate chips, let them soften & melt, then spread to even layer
Topping of your choice are optional
Let cool, refrigerate until hardened, break into pieces
