1 8 oz. pkg cream cheese, softened
1/3 C sugar
2 T rum or 1/2 T rum extract
8 oz tub Cool Whip, thawed
1 8 1/4 oz can crushed pineapple with syrup, undrained
7 oz pkg shredded coconut (2 3/4 C)
small can of mandarin oranges, drained

Directions:
Directions:
Mix together rum, sugar, cream cheese until smooth. Fold in 2 C Cool Whip, pineapple w/syrup and 2 C coconut. Pour into a wax paper or plastic wrap lined pie plate. Cover with remaining Cool Whip and mandarine oranges; sprinkle with remaining coconut. Freeze 2-3 hours or more.

I got this recipe from Mary Pavlovsky back when she moved into her brand new town house in Harrington. I think she was having a home party (Tupperware or something like that) and this is a recipe she made and shared it with me! Thanks Mary!
Originally the recipe she gave me did not have mandarin oranges in it. It's something I added to make it look pretty.
