4 egg yolks
1 stick of butter - cut into 3rds
juice from 1/2 lemon
dash salt
dash white pepper

Directions:
Directions:
Cook in double boiler - bottom of top pan on water line.
Place 4 yolks and 1/3 of butter in pan stirring until butter melts.
Stir constantly so it doesn't curdle. Add 2nd part butter until it melts and then the 3rd until it melts.
If at any time it starts to curdle, take off the heat and keep stirring and lower heat. It is does curdle you may be able to save it with a little bit of water.

After all the butter melts - take of the stove for 2 minutes - still stirring. Then, add salt, peppers, and lemon juice. Place back on stove and keep stirring until thick.

Serve over asparagus or eggs benedict - or use as dip for artichoke.
