Cut chicken tenders into smaller pieces. Remove tendons.
Place chicken nuggets in buttermilk. Soak for at least an hour (the longer the better; even overnight).
Preheat the air fryer to 390.
Mix together the Italian bread crumbs, Panko bread crumbs, and seasonings. Roll the chicken pieces in the mixture.
Spray one side of the chicken pieces in olive oil spray. Place the chicken in the air fryer oil side down in one layer. Then spray the opposite side with olive oil.
Cook for 4 minutes, then flip nuggets. Cook for an additional 4 minutes.
Remove from the air fryer. Sprinkle with additional salt, if desired.
Serve with your favorite dipping sauces.
