1 9 inch Pie Crust
2 tbsp. Butter
1 c.of sliced Zucchini
1 c. shredded Carrot
1 c.chopped Mushrooms
1 3/4 c.Mozzarella Cheese shredded
1 1/4 c. Ricotta Cheese
1/2 c. chopped Onion
1/2 cup Bell Pepper
2/3 c. 1/2 and 1/2 cream
4 eggs beaten
3/4 tsp. Salt
1/2 tsp. dried Oregano
1/2 tsp. dried Basil
1/4 tsp. Garlic powder
Freshly Ground Pepper
1/4 tsp. Paprika
3/4 c. cooked Sausage crumbled and drained

Directions:
Melt butter. Cook Vegetables starting with onion and bell pepper first until slightly tender then add rest of vegetables for 8- 10 minutes or until tender. Place half of vegetables into pie crust and sprinkle with mozzarella cheese. Combine Cheese, Milk,Spices and Eggs. sprinkle sausage over mixture in pie crust then pour cheese mixture over the sausage. then place rest of vegetable mixture over the cheese mixture carefully and evenly.Sprinkle with Paprika.
Pre bake pie crust in oven @ 425 degrees for 7 minutes then lower temperature to 350 for 8-10 minutes until crust is golden.
Pre cook sausage pour off grease.
Place ingredients into baked pie crust and cook in oven at 425 degrees for 45 minutes until knife placed in center of quiche comes out clean.

You can make this vegetarian by just skipping the sausage. This was a absolute hit at a Baby shower we had at work for one of the nurses. Everyone wanted my recipe. Here it is!
