One pasture raised chicken
Cut into pieces or ask butcher to cut. Chicken feet help the broth.
Water to cover in a Dutch Oven
One carrot, 1/4 of onion, 2 stalks celery,a bay leaf. Salt and pepper, whole garlic clove smashed and Mushroom stems. Simmer minimum of 2 hours. 4- 6 hours is best. Remove chicken after 1 hour. Reduce heat and slow simmer.
