1 cup chopped onion
¼ cup butter
4 cups hot cooked rice (any kind)
2 cups sour cream
1 cup cream style cottage cheese
½ teaspoon salt
1/8 teaspoon pepper
2 cans(4 oz each) green chilies, pureed. I sometimes use more!
2 cups grated cheese

Directions:
Directions:
Saute onion in butter until transparent. Mix rice, onions, cottage cheese, sour cream, salt and pepper and pour ½ into lightly greased 9 x 13 dish. Spread chilies over rice, cover with ½ of the cheese then repeat layering with remainder of the rice and cheese. Bake 350 40-45 minutes. Makes 8 servings.
