375 ml (1 1/2 cups) chopped yellow onions
1 cup peeled and sliced carrots
1/2 lb mushrooms, wiped clean and thinly sliced
4 cups low sodium broth (beef or vegetable)
1/4 cup chopped parsley
1/2 cup medium size barley rinsed and drained
1/4 tsp black pepper

Directions:
Directions:
Place all ingredients in a large, heavy saucepan. Bring to boil over moderate high heat. Lower heat so mixture bubbles gently. Simmer partly covered for 40 minutes or until barley is tender.
