1 tbs butter
2 tsp freshly grated ginger
1/2 lb carrots thinly sliced on the diagonal
pinch of salt and freshly ground pepper
1-2 tbsp finely chopped coriander

Directions:
Directions:
Melt butter in a wide frying pan over medium heat. Add carrots and ginger and cover and reduce heat to medium low. Cook for 5-7 minutes stirring occasionally until carrots are done as you like. Sprinkle with salt, pepper and coriander.
