2 zucchini
1 large onion
2 cloves garlic
1 tbs oil
1 tbs mustard seeds
1 tsp grated ginger
3/4 tsp turmeric
salt and cayenne pepper

Directions:
Directions:
Cut zucchini into 1/4 " strips and 2 " long. Chop onion and garlic. Heat oil in a frying pan over high heat until very hot. Add mustard seeds, cover and reduce heat to low until seeds pop. Add onion, garlic, ginger, turmeric and 1/8 tsp cayenne. Stir and cook, uncovered on medium heat until soft, about 5 minutes. Add zucchini and 3/4 tsp salt. Cook on medium low heat until tender about 15 minutes. Cover if zucchini sticks. Taste and add salt and cayenne if needed.
