2/3 lb fresh beets
4 tsp red wine vinegar
3/4 tsp salt
1/4 tsp pepper
4 tbs oil
1/4 cup broken walnut pieces
Your favorite Salad Greens

Directions:
Directions:
Peel and grate the beets. Shake the vinegar, salt and pepper in a jar until the salt dissolves. Add the oil and shake until blended. Toss beets with this dressing and the nuts. Arrange greens on 4 salad plates and top with beets.
