4 T. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tsp. baking powder
1 lb. Monterey Jack cheese (grated)*
2 pkgs. chopped spinach (thaw & drain)


*I have also substituted with Co Jack cheese (CC)

Directions:
Directions:
Preheat oven to 350.

In a 9x13x2 baking pan, melt butter in oven. Remove from oven.

In large mixing bowl, beat eggs, then add flour, milk, salt & baking powder. Mix well.

Add cheese and spinach.

Pour all ingredients into baking pan and bake for 35 minutes.

Remove and cool for 45 minutes in order to set. Cut into squares.

(Makes 24 appetizers)
