Waffle Toppings

1 3/4 cp all purpose sifted flour
2 tsps baking powder
1/4 tsp salt
2 tbsp sugar
3 eggs separated
1 cp milk
1 cp heavy cream
1 tbs plus 1 tsp grated lemon rind
3 tbsp melted butter

Directions:
Directions:
Sift together flour, baking powder, salt and sugar into large bowl.
Beat egg yolks slightly in small bowl. Stir in milk and cream. Blend in flour mixture until smooth. Stir in lemon rind and melted butter.
Beat egg whites in medium size bowl until stiff but not dry peaks form. Fold gently into batter.
Bake in waffle iron following manufacturer's instructions. Serve hot sprinkled with confectioner's sugar.
