1 tbsp vegetable oil
4 to 6 lamp or pork chops
1 tbsp apricot jam
1 tbsp water
1 tsp soy sauce
1 clove garlic, crushed or pinch of garlic powder
generous pinch of ground ginger

Directions:
Directions:
Heat oil in nonstick frying pan just large enough to hold chops. Trim fat from chops. Cook over medium-high heat until lightly browned on both sides. Meanwhile stir the remaining ingredients together. As soon as the chops are browned, drain off the fat. Immediately spoon sauce over chops. Cover, reduce the heat to low and simmer until the chops are done as you like. (one inch chops will need about 2 to 3 minutes for medium rare but 3/4 inch chops will need 20-30 minutes simmering). Turn several times. Serve with stir friend vegetables and rolls or rice.
