1 cup water
1 cup brown sugar
1 cup butter
1 cups raisins, chopped
3 cups golden raisins
1⅔ cups currants
1 cup glace cherries, chopped
⅓ cup candied mixed peel
⅓ cup glace pineapple, chopped
tsp. cinnamon
tsp. nutmeg
tsp. ginger
tsp. allspice
1 tsp. baking soda
3 eggs
3 cups all purpose flour
4 tsps. baking powder
cup rum or dry sherry

Preheat oven to 350F. Cook over low heat to melt butter. Blend in water, brown sugar all the fruits, spices and baking soda. Allow to cool. Sift flour together with baking powder. Add flour and eggs to fruit mixture and mix evenly. Place mixture in double lined 8" square cake tin. Use buttered brown paper, cutting paper 2" taller than tin. Bake for 1 - 2 hours. Insert wooden skewer to test cake is cooked. When done, carefully turn out cake on rack and remove paper. Drizzle rum over warm cake. Cool completely. Wrap in wax paper and aluminum foil to store.
