1 large tomato sliced
2 endives separated into leaves
1 small red onion, sliced
2 tbs olive oil
2 tbs red wine vinegar
1 tbs finely chopped parsley
1/8 tsp basil
1/2 tsp salt
1/2 tsp pepper
1/4 cp grated parmesan cheese

Directions:
Directions:
Preheat oven to 350. In shallow 1 qt. round casserole, arrange tomato, endive and onion. In small bowl, combine oil, vinegar, parsley, basil, salt and pepper. Brush over tomato and endive. Sprinkle with cheese. Bake 10-12 min or until vegetables are tender.
