2 cups mature potatoes, pare grated coarsely
3 eggs
1½ Tbsp. all purpose flour
1¼ tsp. salt
1-2 tsp. grated onion
¼ inch or more of beef drippings or oil

Directions:
Directions:
Fold the potato gratings into a muslin towel and wring the towel to extract as much moisture as possible. In a separate bowl, beat eggs well and add them to the potatoes. Combine the flour and salt and sift into the mixture. Add the grated onion. Heat the beef drippings or oil in a heavy skillet. Place spoonfuls of the potato mixture into the skillet, forming them into patties ¼” thick and 3” in diameter. Brown, then turn and brown the second side until crisp. Serve with applesauce or confectioners sugar. If you must hold until all the batter is cooked, place them on a rack above a baking sheet in a 200ºF oven. Then serve all of them at once after draining on a paper towel to remove any excess fat.
