15 fresh corn tortillas
Salt
Tajin spice
Oil for frying

1 jar (10oz.) Salsa Verde
1 cup chicken or veggie stock
8 eggs
Sour cream, diced onions, shredded cheese, hot sauce, cilantro (for garnish)

Directions:
Directions:
In a large frying pan or deep fryer, heat oil to 375º. Cut corn tortillas into 8 wedges. Working in batches, fry tortilla chips until golden brown, about 1-2 minutes. Drain on paper towels, and season lightly with salt and Tajin spice while still warm. Set aside.
In a large skillet, heat salsa and stock on medium heat until it starts to simmer. Add add the tortilla chips (enough to coat in the sauce-you might have to work in batches). Heat the tortilla chips and salsa until the chips are softened and warmed through. Divide the Chilaquiles onto plates.
In a small skillet, cook 2 eggs per person, and place them onto each plate.
Garnish with shredded cheese, sour cream, diced onion, cilantro, or hot sauce and serve immediately.

If you don't want to make your own tortilla chips, you can use store bought, just lower the salt on the rest of the recipe. Tajin is a Mexican chile lime salt spice, used with fresh fruit
