3 cup self-raising flour (I use all purpose, gluten-free)
¾ cups brown sugar
1 cup cold butter
pinch of salt
1 cup grated cooking apple

Flour for rolling out dough
Cinnamon sugar to sprinkle

Directions:

PREHEAT OVEN 350º

1. Cut cold butter into flour until it looks like breadcrumbs.
2. Mix in brown sugar and pinch of salt.
3. Peel and grate the apple. Add the apple to the flour mixture.
4. Beat the egg in separate dish. Add the beaten add to the apple mixture and mix to a fairly stiff dough.
5. Roll out dough on parchment paper to about ½ inch thick and cut into rounds.
6. Bake for about 8 minutes, until slightly golden.
7. Sprinkle with cinnamon sugar and serve.

Greg and I travelled to Wales in 2016. This is a traditional Welsh scone recipe made as a portable breakfast/snack. We visited a beautiful castle staffed by volunteers who dressed in period fashion and who were very knowledgable about the castle and the time period. The women working in the amazing kitchen were wonderful and very sweet. They made me a gluten-free version of the Tinker cakes so I could enjoy them. Very yummy and would be amazing with clotted cream and jam.
