Ingredients: ½ pound ground Italian sausage (I use hot, but will use sweet if making for kids)
1 pound ground beef
2 cups chopped sweet onion
2 cups chopped green, red, yellow bell pepper
8 garlic cloves, minced
2 Tbsp chili powder
1 Tbsp brown sugar
1 Tbsp ground cumin
3 Tbsp tomato paste
1 tsp dried oregano
1 tsp freshly ground black pepper
1/2 tsp salt
2 bay leaves
2 cups Merlot or Red wine
2 cans Rotel, drained (green chili and tomatoes)
4 cans diced tomatoes, with juice
2 cans kidney beans, drained
1 can black beans, drained

Directions:1. In large dutch oven or stew pot, brown sausage and beef. Add onions, bell peppers, and garlic cook until onion is translucent.
2. Add spices, including bay leaves, and cook for 1 minute, stirring constantly. Add remaining ingredients. Bring to a boil and reduce heat to simmer. If too thick, add a can of tomato sauce. If too thin, add more tomato paste. Cook for 1 hour, stirring occasionally.
3. Remove bay leaves. Serve with rice, cheddar cheese, sour cream, hot sauce and corn bread. |

Notes: Everybody loves a good chili! I have made many different version over the years and finally found this recipe which is a result of several recipes that I combined and tweaked. My brother entered this in a chili cook off in Kansas- and it placed second (behind a super spicy chili). I really like this recipe because it is favorable and mild enough for children's palate, but is easily spiced up if desired. The wine is crucial- brings out the flavor. Enjoy!
