1 lb. cremini mushrooms
2 cups cauliflower - cut into small
2 cups cherry or grape tomatoes
12 cloves of garlic - peeled
2 tbsp. olive oil
1 tbsp. Italian seasoning
salt and pepper to taste
1 tbsp. fresh parsley - chopped (optional)

Directions:
Directions:
Preheat oven to 400.

In a large bowl place mushrooms and the other vegetables. Add the olive oil, italian seasoning, salt and pepper. Toss to completely coat.

Place on a baking sheet, single layer, and roast for 20-30 minutes. Mushrooms should be golden brown and cauliflower fork tender.

Garnish with chopped parsley - (optional)
