Pickled slices beets or cooked beets
Mint leaves
Cheddar slices

Cut the cheese into bite size slices (approximately 1") and then cut the mint and beets into approximately the same size pieces. Dry the beets on a paper towel so they don't bleed on the plate. Layer cheese, mint and beets with cheese on the bottom and stick a pretty toothpick in each bite.
