2 lbs fresh spinach or 4 (10 oz) boxes frozen
1 medium onion, grated
1 lg carrot, grated
1/2 pint sour cream
1 (11 oz) can cream of chicken soup
1/2 pkg (4 oz) Pepperidge Farm seasoned dressing
1 stick of butter or margarine

Directions:
Directions:
In large skillet, cook vegetables until tender, (can use butter if you like) drain thoroughly.
Add remaining ingredients, reserve 1/2 of dressing for top.
Pour mixture into a casserole dish then sprinkle reserved dressing crumbs over top.
Melt 1 stick of butter or margarine and pour over top.
Bake at 350º F for about 45 minutes or until bubbly.
